Have I got a treat for you! I don’t do posts back to back, but I had to get typing after my kitchen escapades this afternoon.
Look at that. Baked, proper, yeasted dough, doughnuts. And admit it, don’t you want one? Which flavour? Plain sugar coated? That’s the doughnut rings. Coconut? The snow-powder topped ones. Orange and Raspberry Jam? See the ones with the wee pink dots? Chocolate Glazed? Oh, come on!
There are no restraints here. Take comfort in the fact, that these pretty pillows are only 175 calories each. Yup. Crying shame though, that such an applaudable virtue is rendered utterly useless, since it is nigh on impossible to have only one. Then again, if you are going the whole hog making them, might as well be a pig about it.
This fantastic, easy recipe comes via Jo Blogs, Jo Bakes. Jodie’s blog is filled with all manner of goodies and this woman lives to bake. However, she came up trumps highlighting this recipe out of Olive Magazine. And Jo’s instructions and detailed photos are true to form when you come to make these yourself. And it really is easy. If yeast has always bewildered you so far, then I would suggest dipping your virgin fingers into this yeasted dough. Check out Jo’s blog for all the nitty, gritty, flour dusted details.
The original is an Orange and Raspberry Jam filled, pretty scented number. I wanted to get more flavours with one knead. So, I made the dough without the orange zest and divided it into three after the first prove. I kneaded orange zest into one part, coconut milk powder into the other and the third I left plain. With the plain one, I also cut out a ring like you would get with a traditional doughnut, to dredge in caster sugar later. And to glaze with chocolate!
Everything else remains the same. I loved each of the flavours. The orange and jam ones were a revelation, the perfume of the citrus married so well with the tangy, sweet jam. The coconut ones quenched my ever present yearning, and the plain ones just make me happy. My kids wolfed this down, barely coming for breath. And it made an excellent bargaining tool at the dinner table for Lil Lassie. I’ve never seen her eat a curry so fast! Other combinations could be with Nutella, raspberry glaze, lemon curd with a passionfruit glaze, cinnamon doughnuts filled with an apple puree, or whatever you can dream of.
So on that happy note, I am going to ditch you, and eat the last doughnut of the day, snuggled up in front of the telly, watching How to Train Your Dragon. Hiccup’s training routine would have gone far easier, with one of these doughnuts in his hand.
